Choc Mint Truffles 💗✨ 3 cups raw cashews, soaked for 3-6 hours
3 tbsp hemp seeds @myhemple
1 cup rice malt syrup
approx 10 drops vanilla stevia or monk fruit sweetener
1/2 t salt
16 drops peppermint oil
2/3c coconut cream
1 cup melted coconut butter*
1/4 tsp spirulina

Choc Coating;
1 cup melted coconut oil
3/4 cup maple syrup
1 cup cacao powder
1/2 tsp salt

1. Drain and blend the cashews with hemp seeds, rice malt, stevia, salt, peppermint oil & coconut cream until silky smooth.
2. Add the melted coconut butter and spirulina and blend again.
3. Transfer to a medium sized bowl or container and freeze for at least 5 hours until firm.
4. Using an ice-cream scoop, scoop out the mixture and roll into balls (you may need to let it defrost slightly if still frozen) and place on a lined baking tray. Transfer back to freezer. If your finding it hard to shape them I find it handy to scoop them all out (even if they look ugly) then pop them in the freezer to firm up slightly, then proceed to shape them further with my hands.
5. Whisk together all chocolate ingredients until smooth. Coat each ball 1-2x (using a toothpick helps) 
Keep in the freezer in a sealed container, and leave a few in the fridge (lasts 2-3 months in freezer and 4-5 days in fridge) 🙂 ** coconut butter can be cheap & easily made by blending desiccated coconut in a food processor or vitamin until silky smooth 🙂 it’s essential to giving these truffles a bomb texture, but you could use a mix of coconut oil & melted cacao butter if you can’t find desiccated coconut anywhere.
